Going to these places, with a very prominent sun tends to turn the sky a very lighter shade of blue / white.

Bumming down /up the Exposure (EV), you either save on your sky, but in return a very darken image or screw the sky and get your details.

So photographers use a technique called Exposure Blending; this merges 2 images together, shot in different EV to give you the details but still save the sky...
